Handmade frozen pizza? It's a thing, and this small Seattle business makes it!

Good Luck Bread is run by a husband and wife team who are proving frozen pizza can be a premium dinner option. #k5evening

SEATTLE — Feel free to skip Totino’s and DiGiorno in the frozen food aisle – a Seattle company makes frozen handmade sourdough pizzas with premium ingredients.

"Often (made) by our hands,” laughed owner Corrie Strandjord, who runs the small business with her husband Eric Anderson. "We eat our own pizza - a lot - every day.”

Good Luck Bread claims to be the “best ever frozen pizza” – and based on their 80% re-order rate, customers seem to agree.

They specialize in hand-formed frozen pizzas made with premium ingredients like Italian Parmigiano Reggiano and an Ezzo pepperoni varietal.

"It's one of the more tedious toppings, takes a little while,” Strandjord said. "But it's worth every slice."

The business idea began with her passion for bread baking and eventual job as a private chef.

Anderson worked in ice cream for more than a decade and knew about the world of frozen food.

"When the pandemic happened, we kind of looked at each other and were like, 'If we're ever going to do it, this is probably when,’” he said. “(We) got in a car, bought 50 pounds of flour, and off we went."

Right off the bat, their pizzas stood apart from the ones in frozen food aisles. They use local flour and even mill some of their own, which is mixed with the sourdough starter.

"We hand-stretch our dough, we don't use commercial yeast, it's all natural leavening," Strandjord said.

Then they add house-made sauce and par-bake each pie.

"We're using a deck oven which is at a fairly high temperature, and what we're trying to do is get a really robust cook on the bottom of the pizza, with leopard spots and a little bit of blistering,” Anderson said. “That's something that's really hard to do in your home oven, which only goes up to 500 degrees."

After the pizzas cool, toppings are added and then they’re frozen, packaged, and delivered to the homes of customers.

The delivery service started as a necessity during the pandemic and Anderson said they've found no reason to discontinue it. It’s an easy way to connect with customers and gives people a low barrier of entry to try Good Luck Bread for the first time.

"It's like a part of us, do you know what I mean?" Anderson said. "We made it to please ourselves first, Corrie would make these just for ourselves, and now we make a lot of them every week."

They estimate they’ve handmade roughly 50,000 pizzas so far.

"It's been really gratifying and it's just been really special to share with everyone,” Strandjord said.

Good Luck Bread accepts online orders for delivery throughout the Seattle area and on the east side. There’s also a subscription option. Customers can also stop by their production kitchen in SODO for in-person pickups on Saturdays.

Strandjord also makes "Really Good Cookies" - handmade frozen dough you can bake at home.
