Mae's Empanadas (meat)

ABUELITA S EMPANADASTM

Carne (meat):

Ingredients-

1 lb. Ground beef

1 yellow onion, chopped

1/3 cup white sugar

1 tsp salt

1 tsp pepper

1 tsp cumin

1 tsp paprika

1 potato (1/2 cubes)

12 pitted Olives (we use Estancia Lucia Arauco Olives from

Argentina)

2 hard boiled eggs (diced into 12 pieces)

1 dozen frozen empanada dough

Before cooking, spread ground beef out in pan/bowl and add spices, mixing thoroughly.

Lightly boil cubed potatoes (Potatoes should remain firm - DO NOT OVERCOOK).

Saute onion until translucent, add sugar and stir until sugar is melted.Add spiced ground beef and brown. Allow to simmer until ingredients are well blended. Then mix in potatoes.

Chill filling and thaw dough in refrigerator.

Assembly: Place a heaping tablespoon of filling in center of empanada dough.Add one olive and one piece of hard-boiled egg. Fold over to 1/2 circle and crimp edges with a fork.Transfer to lightly oiled baking sheet and pierce empanada 3 times with a toothpick.

Bake in hot oven (375 degrees) for approximately 30 minutes, until crust is lightly browned.
