Toast to the PNW with the Seattle-inspired drinks at Rider

Rider in Hotel Theodore is new hotspot in downtown Seattle is inspired by the Puget Sound.

The restaurant celebrates two of the region's most defining characteristics -- the forest and the ocean.

Rider is basically brand new. Hotel Theodore opened in November of 2017 and is an upscale hotel that honors Seattle's long tradition of makers and builders.

They even have artifacts on hand from the Museum of History & Industry (MOHAI).

Here the menu celebrates all the Pacific Northwest has to offer, and every plate looks like a piece of artwork. They feature seafood caught by local fisherman who use sustainable practices and they get their meat, dairy and veggies from local farmers and sustainable foragers.

Even the cocktails are made from fresh-picked ingredients.

Here's what we tried:

  • One Inch Punch – This cocktail honors Bruce Lee and is made with Pisco, pineapple liqueur and juice, lime, agave, egg white, coffee beans and Peychaud's bitters.
  • Fife's Failed Plan – A reference to the city's failed attempt to buy the Space Needle, this Mezcal drink is expertly mixed with Amaretto, orange juice, lime and cardamom bitters.
  • Cold, Bold & Together (CBT) – The name comes from Kenny G's first album and is represented with bourbon, Amaro, sweet vermouth, Peychaud's bitters, and Absinthe.
