Maria Coassin opened the doors of Gelatiamo in 1996. It was the first café of its kind in Seattle.

Maria’s inspiration came from her family’s 200-year baking tradition in Maniago, Italy, and her own desire to create a unique experience.

Maria is especially proud of her panettone bread, a symbol of the Italian holiday season. She makes about 1,200 every year, and the baking process of the special bread is not simple.

It takes 27 hours, from start to finish, and is made essentially by hand, with good cheer and artisanal dedication.

For Maria, this panettone is very special because it's made using the recipe that had been in the Coassin family for many generations.
