Learn how to spot an authentic Irish whiskey at the Irishmen

An Irish whiskey is integral to a St. Patty's day party.

SEATTLE — Can you tell Irish whiskey from Scotch whiskey? You better learn before beginning Saint Patrick's Day celebrations. Barry Boyle from the restaurant The Irishmen joins New Day Northwest to give helpful tips that will help you tell the difference. Boyle will also show off some of the authentically Irish dishes you can get at their fine establishment.

Here's the recipe for The Irishmen's Colcannon

Ingredients:

  • 1 large russet potato (about 1 lb.)
  • 2 tsp Kosher salt
  • 1 tsp granulated garlic
  • 1 tsp black pepper
  • 1 ounce butter
  • 1/2 cup half and half
  • 4 ounces of rough-chopped corned beef
  • 1/2 cup diced yellow onion
  • 2 breakfast sausage links, chopped
  • 1 cup chopped green cabbage
  • 1/2 ounce olive oil
  • 1 tablespoon white vinegar
  • 2 tablespoons white wine (chablis)
  • 1 tsp Montreal seasoning
  • 1/3 cup water
  • 2 tablespoons green onions

Directions:

  1. Peel potato, leaving about a quarter of the skin on and chop into pieces. 
  2. Boil potato until a fork can be easily put through it.
  3. Drain water and add kosher salt, garlic, pepper, and butter, and roughly mash while adding half and half and mix together.
  4. In a saute pan over medium heat, combine olive oil, sausage, corned beef, yellow onion, and Montreal seasoning.
  5. Saute for 3 to 4 minutes until onions start to become translucent, then add cabbage and saute for 2 minutes
  6. Add white vinegar and white wine and saute for 1 minute, then add water and saute until water is completely evaporated.
  7. Combine the mashed potato to the corned beef and cabbage and mix together.
  8. Serve colcannon on a plate and top with green onions.
