Celebrate Japanese culture at the Cherry Blossom Festival

The festival commemorates a gift of 1000 cherry blossom trees given to Seattle by the former Prime Minister of Japan, Takeo Miki, in 1976

SEATTLE — The annual Seattle Cherry Blossom & Japanese Culture Festival kicks off Friday, April 26, with an impressive line up of events that celebrate Japanese and Japanese-American culture. Festival-goers can find an array of demonstrations, educational presentations, dancing, music, and food. There will be a 2020 Tokyo Olympics Preview, a table tennis tournament, martial arts demonstrations and more. 

Festival participant Chef Kimie Kuramoto joins New Day Northwest to make Nanbanzuke, a traditional Japanese salmon dish, and talk about the amazing things you can experience at the festival.

Salmon Nanbanzuke (Salmon in Vinegar Sauce):

Ingredients:

  • 4-6 ounces salmon
  • Salt to taste
  • 6 tablespoons Katakuri-ko (potato starch)
  • Vegetable oil (enough to deep fry)
  • 1 carrot, julienned
  • ½ stalk celery, julienned
  • ½ sweet onion, small
  • 1 stalk green onion, cut on the base
  • 1 piece fresh ginger, about a 1-inch piece
  • ½ red capsicum pepper, seeded, thinly sliced,
  • Lemon wedges, for decoration
  • Green lettuce or a nice colorful seasonal lettuce, for decoration

Marinade:

  • 1/3 cup rice wine vinegar
  • ¼ cup soy sauce
  • ¼ cup kombu or katsuo dashi stock
  • ¼ cup Mirin
  • ¼ cup Sake
  • 1/3 teaspoon salt
  • ¼ cup lemon juice

Directions: 

  • Lightly sprinkle salt on salmon, then slice it into 3 to 4 filets (edges cut slightly diagonal). Sprinkle katakuri-ko on salmon.
  • Heat oil to just under 350 F. Fry salmon, and place on a paper towel to remove excess oil.
  • Peel carrot skin, and cut all vegetables into 1-inch long and thin sections
  • Slice ginger very thin. Cut red pepper into small pieces
  • Ina small pot, boil vinegar, soy sauce, dashi stock, Mirin, Sake, and salt, then remove from heat and mix with lemon juice and vegetables.
  • In a separate container, pour vinegar sauce over fried salmon and soak for at least 20 minutes.
  • Decorate with green lettuce in the bottom of a plate and garnish the salmon with lemon wedges.
