SEATTLE — We continue our week of royal celebration by learning how to make treats from across the pond! Lori Duckworth from British Bites, a British bistro, bakery, and grocery in Puyallup that specializes in British goodies, shows us how to make Mini Vickis.
Recipe for Mini Vickis:
6 oz self rising flour
6oz unsalted butter
6 oz sugar
Mix all ingredients, divide, bake at 325 for 10 minutes. Ovens vary. Cake should spring back with a light touch. Cool. Add vanilla buttercream and spread between with a spread of raspberry jam.
