Homemade pies are a perfect way to end a holiday dinner. High 5 Pie owner Dani Cone shares her secrets for creating a simple but fantastic apple pie.
HIGH 5 PIE’S APPLE-CRANBERRY SLAB PIE
Makes a 13-by-18 Slab Pie
3 cups fresh cranberries
¾ cup water
1 ¼ cup sugar
8 tart apples
1 tablespoon lemon juice
2 teaspoons cinnamon
¼ teaspoon ground cloves
3 tablespoons flour
Your favorite double crust recipe
Preheat oven to 375 degrees.
Combine water and ¾ cup sugar in a pot. Bring to boil and let sugar dissolve. Add the cranberries, lower the heat and let simmer for about 10 minutes or until the cranberries pop. Set aside.
Peel, core and cut apples into ½-inch slices. Combine apples in a bowl with lemon juice, cinnamon, cloves and flour. Mix to coat the apples. Stir in cranberries.
Roll out the pie dough to about ¼-inch thick, leaving enough to make lattice strips, and press it into a half-sheet (13-by-18) pan. Spread the filling out on the crust. Cover with strips of dough to make a lattice top. Trim edges and crimp. Bake for 55 to 60 minutes, or until the crust is golden and the apples are tender. Let cool before cutting and serving.

1. When making the dough, make sure the butter and the water you use are ice cold. Very important!
2. Using fresh fruit in the filling is always preferable, but frozen fruit can make a lovely pie as well. In this pie, we are using frozen Granny Smith apples for a delicious, crowd-pleasing Apple pie that has a bit of a snap to it.
3. Looking for a way to fancy-up your regular apple pie? Add cranberries. The taste combination is always a winner and the colorful presentation adds festivity to any table.
4. Pie for the masses: When you're feeding a larger group, a great alternative to baking multiple pies is the fun and easy "slab pie." Using a cookie sheet or half sheet-pan, spray the bottom and line with your pie dough. Fill with your favorite filling. Then, simply sprinkle on a crumb topping (or you can do a crust topping, too) and bake. When golden brown, you can easily cut your slab pie into squares and serve a hungry crowd of pie-lovin' folks.
5. Pie pans: glass vs. ceramic vs. tin. True, there are pros and cons to each, but I personally prefer glass...just like my Grandma Molly always uses.
6. Never underestimate what a little sprinkle of spice can do. Allspice, Clove, Ginger or Nutmeg can add just the perfect little "zing" to any pie.
