Celebrate St. Patrick's Day with a traditional Irish stew

Beef and Guinness Irish Stew (Recipe provide by Fado Irish Pub)

Yield: 6 qts

Prep Time 40 minutes

Equipment:Large Braising Pan

 
 
 
Ingredients:
 
Part 1
4 lbs Beef Stew Meat - Medium Cube
4oz Flour
5oz Margarine
 
Part 2
1 cup Tomato Paste
 
Part 3
2 cups Red Wine
2 cups Guinness
 
Part 4
2 cups Beef Stock
2 qts Knorr Demi Glace
 
Part 5
3 stalks Celery chopped 1 inch thick 
1 large Yellow Onion diced in thick chunks
3 large Carrots chopped 1 inch thick
1 bunch of Leeks chopped 1 inch thick 
3 large Parsnips chopped 1 inch thick
1 large Turnip chopped 1 inch thick
6 Potatoes cut in halves or quarters
 
Part 6
1/2 tbsp Salt
1/4 tsp Pepper

 

Cooking Method:

Part 1          
In a large bowl coat the beef with the flour 
Melt the margarine in the braising pan          
Add the floured beef and brown.          
            
Part 2          
Add the tomato paste & mix well with the browned meat          
            
Part 3          
Add the liquids from part 3 and allow to cook for 2-3 minutes          
                
Part 4          
Add the stock and Demi from part 4          
Bring to a simmer & cook for 10 mins          
            
Part 5          
Add all the vegetables from part 5          
Mix in well and cook for another 20 minutes or until the vegetables are tender          
           
Part 6          
Season with salt and pepper the allow to cool in ice bath prior to storing

Has anyone made this yet and how was it? I cannot imagine not letting the stew meat cook for at least a couple of hours in order for it to even be edible. Is this a typo on the cooking time or am I missing something?
