If you are a kid - or if you have kids in your life - chicken nuggets are no doubt a big part of your life. But how do you make chicken nuggets healthy? Chef Eric Hellner from Metropolitan Grill shows how.

To say eight-year-old Kaylie is comfortable in the kitchen is an understatement. She needs very little help from proud dad, Executive Chef Eric Hellner from Metropolitan Gril. Today, Kaylie is saying no to McNuggets by making her own from scratch.

The nuggets start as a chicken breast. Kaylie carefully slices them into bite-sized pieces. The she preps some flour, eggs and Panko to bread the chicken. The second grader has already mastered this three-step process.

When it's time to fry, Eric watches Kaylie closely.

If you actually get your oil hot and put your food in when it's hot, it doesn't absorb as much oil as people think, said Eric.

Within minutes, the nuggets fry up to a golden brown. Using more fresh ingredients, Eric whips up a dipping sauce with 5-year-old Evan. After just 20 minutes, dinner is served.

You'd be surprised at how much fun it is, how much everyone gets out of it, and it gets down to a meal, said Eric.

Serves 2-4 total time about 20 minutes
1 lbs of boneless skinless chicken breast
1 cup all purpose flour
2 cups Panko
3 each eggs
Salt and pepper
6 cups vegetable oil (or any oil you like to fry with)

Cut your chicken breast into strips or nuggets depending on the style you like. You should get about 8 2oz pieces

Put the eggs, flour and panko into separate bowls and season the flour to your liking with the salt and pepper. Kaylie likes two to three shakes of pepper and three turns of a salt mill in hers.

Place the oil in a sauce pan or a skillet of your liking

Turn the oil on and let it come up to 350 to 375 degrees

Place 3 pieces of chicken the flour and coat completely

Move the chicken to the egg and do the same

And finally place them in the panko and get a full breading on them

Repeat with all the chicken pieces until they are all breaded.

When your oil is ready place 3 to 4 pieces of chicken in and cook for about 4 minutes or until finished. Kaylie just breaks them open to see if they are done but you can use a thermo if you want. Then place them on paper towels to let them cool. Serve with Ranch or desired sauce.

Total time about 10 minutes

1 cup sour cream
1 cup buttermilk
3/4 cup mayo
1 tbsp. chopped fresh dill
1 tbsp. chopped fresh parsley
1.5 tsp garlic powder
1.5 tsp onion powder
Salt and pepper to taste

Place all the ingredients in a mixing bowl and blend until smooth. Adjust seasoning and serve.
