KING 5's Christie Johnson visited the Golden Beetle on Wednesday to get some delicious recipes and tips from Chef Maria Hines. Check out the recipes below.

Grilled Halloumi Cheese Salad with Sliced Pink Lady Apples

1 bunch arugula
1 package Halloumi cheese (slice 1/2 inch thick)
1 apple
Lemon Vinnegrette

Grill cheese for 4 minutes per side
Toss arugula in vinaigrette
Place cheese and apples on top of arugula
Drizzle with honey

Seared Sockeye Salmon with Lacinato Kale, Delicata Squash, and Black Olives

Spice rub (ground white pepper, fennel seed, corriander)
Delicata Squash
Lacinato Kale
Black olives

Rub slamon with spice mixture. Sear salmon in a pan on high heat.
Thinly slice vegetables and sautee together in a pan
Puree part of the squash and sauce the plate in a circle
Place vegetables on top of sauce
Place salmon on top of vegetables
