Bread that can prevent cancer?Candy to treat oral cancer?
It may sound like a miracle drug, but researchers are trying to create some super-charged versions of our favorite foods to help fight cancers.
At NASA, food scientist Yael Vodovotz developed food for a possible mission to Mars. Now she's creating bread, packed with soy and almonds, that could help men with prostate cancer.
We looked at a group of compounds called isoflavens, which are in soy, Dr. Vodovotz said.
Researchers say that those isoflavens may prevent cancer, and the almonds make it easier to absorb them.
Forty men with prostate cancer, including Gordon Renkes, ate the bread three times a day for eight weeks. Renkes said he couldn't tell there was anything different about the bread.
But researchers could tell it had an effect. In 65 percent of the men, there was either a decrease or leveling of prostate-specific antigen, or PSA, a protein which is produced by the prostate. The higher a man's PSA level, the more likely it is that he has prostate cancer.
Dr. Vodovotz said she also hopes the foods will help fight oral and esophageal cancers.
