Top Chefs Kids Menu: Pizza

Chef Greg Johnson shows us how easy it is to make great pizza at home.

Here's the recipe for Skillet Pizza

Ingredients - Tomato Sauce

2T       Olive Oil

3         Garlic Cloves - smashed and sliced thin

3C      Fresh Tomatoes - rough chopped or two 28oz canned whole tomatoes

1tsp    Italian Seasoning - dried

2-3      Basil Leaves - fresh - optional

Sea Salt and Fresh-ground Black Pepper

-Heat olive oil in a medium sauce pot on medium heat

-Add garlic, stir, and cook 1-2 minutes until light brown

-Add tomatoes, Italian seasoning and basil and stir

-Simmer sauce 5-6 minutes or until tomatoes break down completely

-Puree with a hand blender or in a blender

-Season with Salt and Pepper to taste


Ingredients- Basic Pizza Dough - makes 6-7 small pizzas

1.75C      Warm Water

1pack      Dried Yeast

1/4C        Olive oil - extra virgin preferred

1T            Honey

4.5C        Bread or All Purpose Flour - approximately

1T            Sea Salt

1/2C        Ground Flaxseed

-Put the water in the bowl of a mixer or large metal bowl

-Sprinkle on yeast 

-Add olive oil and honey and stir once

-Let sit about 3 minutes - yeast should look foamy

-Add half the flour, salt and flaxseed

-Mix with a dough hook or with your hands

-Add more flour until dough comes together but is still sticking to the bowl a bit

-Knead until dough has a smooth appearance, adding flour as necessary

-The dough should still feel a bit sticky

-With flour on hands form into a ball, it should be smooth on top

-Cover with a damp towel and let sit 1 hour

-Roll out onto a floured board and form into a flat rectangle and let rest 3 minutes

-Cut into 4-6 pieces and form each piece into a ball and let rest 5 minutes

-Form each ball into a pizza round by hand or with a rolling pin as thin as desired

 To make pizzas

 Heat oven to 400 degrees

-Put a cast iron skillet on medium heat and coat pan with olive oil

-Put pizza dough round into pan and spread it out. Cook for a minute

-Top with a light coat of sauce and add some mozzarella cheese and toppings of choice

-Check dough on bottom and when it looks a little brown and crisp place pan in the oven

-Bake 8-10 minutes or until cheese is melted and golden brown

-Let pizza rest 2 minutes before cutting into slices
