Recipe: Sky City Mocha Braised Short Ribs
Brine:
Marinate 2 lbs beef short ribs in Brine 6 hours or overnight
- 1 cup salt
- 2 cups water
- 2 cups brewed coffee (chilled)
Braising:
- 1 medium onion, sliced
- 3 cloves garlic, smashed
- 2 lbs brined beef short ribs
- 1 cup bittersweet chocolate
- 2.5 cups red wine
- 2.5 cups beef broth
- 2 bay leaves
- 1/4 cup olive oil
Stovetop method:
In a heavy bottom braising pan, heat the olive oil over medium high heat. Season and sear ribs. Remove from pan and add onion and garlic, saute until translucent. De-glaze with wine, add broth. Add ribs back to pan and add chocolate and bay leaf.
Cover tightly and put in preheated 350 oven for 3 hours or until tender.
Remove from oven and let cool for 20 minutes. Remove ribs from liquid and keep warm. Strain sauce and let fat raise to the top to skim. Reduce sauce until it coats the back of a spoon.
Crock pot method:
In a heavy bottom pan, heat the olive oil over medium high heat. Season and sear ribs.
Place ribs in crock pot with all remaining ingredients. Cook 8-10 hours on medium to medium high.
