Recipe for Late Summer Honey Dew Melon Consomme

Late Summer Honey Dew Melon Consommé

   With Summer Berries and Heirloom Tomatoes




1 each Medium Honey Dew Melon

2 each English Cucumber

1 each Cantaloupe Melon and / or Cassava

1 pint each Berries: Fresh Blackberry, Raspberry, Currants, Gooseberry, or other

1 pint Mixed Baby Heirloom Tomatoes

Approx. 2 quarts cold water

½- ¾ cup Honey as needed

As needed Fresh Parsley or Tarragon

Salt to taste




·         Cut and skin Honey Dew melon large dice (reserve ¼ of melon for melon ball garnish)

·         Cut and seed English cucumbers medium dice skin on

·         Blend honey dew melon and cucumber with water and honey as needed on high speed in two batches staining mixture through chinoise strainer

·         Use kosher salt to taste to heighten melon flavor




·         Melon ball additional melon of choice

·         Half heirloom tomatoes for garnish

·         Clean selected berries for garnish

·         Chopped herbs for garnish




·         Place selected fruits and tomatoes in vessel of choice

·         Pour melon cucumber consommé over fruit slowly

Garnish with fresh herbs and serve
