Recipe for Apple Pie Parfait

Holiday Apple Parfait

What you need:
·         1 cup toasted almonds
·         ½ cup raw oatmeal
·         1 tbsp xylitol (or sugar)
·         1 ½ tbsp raw honey (or honey)
·         2 tbsp filtered water
·         4 granny smith apples, peeled and sliced thin
·         1 tbsp xylitol (or sugar)
·         1 tbsp raw honey (or honey)
·         1 tbsp ground cinnamon
·         1 tsp ground nutmeg
·         1 tsp ground cloves
·         1 tbsp organic butter
·         1 cup non-fat plain Greek yogurt
·         ¼ cup whipping cream
·         ½ cup pomegranate seeds
·         1 tbsp raw honey (or honey)
What you need to do:
(Crust) – Take all ingredients and place in a blender. Mix in a blender until all the ingredients are incorporated and a doughy consistency is achieved. Remove from blender and fill the bottom portion of 4 wine glasses with dough. Press the dough into the wine cups firmly with a spoon, creating the crusty foundation of the dessert. Set aside in fridge.
(Apple-filling) – Melt butter in a medium pan on the stove top, set to a medium heat. Add the apples and allow them to cook down with the butter for about 3 minutes. Add the seasonings and stir with a wooden spoon. Add the sweetener and honey and stir again. Allow to cook together for an additional 3-5 minutes, until the apples are soft. When apples are soft, remove from heat and allow the apples to cool for about 10 minutes. When the apples have cooled, take the wine glasses out of the fridge and evenly divide the filling between the 4 glasses. Place them back into the fridge until it’s time to serve.
(Topping) – Place all ingredients into a medium-sized mixing bowl and blend with an electrical mixer at a high-speed. Mix until a “whipped cream” consistency is achieved, it may not be totally whipped, and that’s okay, the yogurt will weigh the topping down a bit. Just mix until the topping is a bit more “fluffy”.   Place topping in fridge until you are ready to serve.
Before you serve, generously divide the whipped topping with a metal spoon amongst the 4 glasses. You should have a 3-layer masterpiece of wholesome apple-deliciousness.   You can garnish with a cinnamon stick, by placing the stick in the topping at an angle or lightly sprinkle ground cinnamon on-top of the desserts.
