“Very Best” Crab Cakes
We use this same recipe to make
Salmon Patties. Make them small for appetizers
8 servings
1# Dungeness crab meat (claw meat included)
1/2 sleeve of saltine crackers ( about 20 single saltines)
2 tablespoons very finely diced celery
1/2 cup very finely diced sweet onion
1/4 cup very finely diced red bell pepper
2 tablespoons olive oil for sauteeing
2 eggs
1/4 cup mayonnaise
1/4 cup milk
1 tablespoon lemon juice
1/8 teaspoon white pepper
Butter for frying
Sauté celery, onion and red pepper in olive oil until just soft. Fill a ziplock bag with the saltines and crush with a rolling pin or empty wine bottle. In a large bowl toss together the crab meat, crushed crackers, and sauteed vegetables. In another bowl combine mayonnaise, milk, lemon juice, and pepper. Pour over crab mix and gently fold together. Cover and set aside for 15 minutes before frying.
Form into patties. Coat a frying pan with butter and when hot fry cakes in small batches not touching each other in the pan, turning once, until browned on each side. About 3 minutes
