Mussels in Beer Broth Recipe:
Chef Angie Roberts, BOKA Kitchen + Bar
 
·         4lbs Taylor Shellfish Mussels
·         2 TBL. Olive oil
·         1 TBL. Butter
·         4 tsp minced shallot
·         2 tsp minced garlic
·         4 TBL chopped fines herbs
·         2 cup lager
·         fresh lemon to taste
 
Preparation: Saute garlic & shallot in olive oil add mussels and toss.  Add beer, bring to a boil, cover, until mussels start to open up.  Finish with butter, herbs and lemon juice.
