Italian Pepperoni Bites
From Bob Sloan's "The Tailgating Cookbook"
Serves 8 as an appetizer
1 (3.5-ounce) package mini turkey pepperoni
1 cup shredded Swiss cheese
1 tomato, chopped
3/4 cup mayonnaise
2 tablespoons pesto
2 (10-ounce) cans refrigerated flaky biscuit dough
- Heat oven to 350º and grease miniature muffin tin.
- In large bowl, combine mini turkey pepperoni, cheese, tomato, mayonnaise and pesto; mix well.
- Cut each biscuit in half.
- Place biscuit halves into muffin cups, pressing gently to fit.
- Spoon 1 tablespoon filling into each cup.
- Bake pepperoni bites 20 to 25 minutes or until golden brown. Serve warm.
