Guacamole
From "The Tailgating Cookbook" by Bob Sloan
Serves 4 as an appetizer
2 ripe avocados, peeled, finely chopped
2 tablespoons fresh lime juice
1 cup thick & chunky salsa mild, well drained
2 tablespoons chopped fresh cilantro
2 tablespoons diced green chiles
2 tablespoons finely chopped onion
1 teaspoon minced fresh garlic
1/4 teaspoon ground red pepper (cayenne)
1/4 teaspoon pepper
Tortilla chips and fresh vegetables sticks as desired
- In medium bowl, coarsely mash avocados with lime juice.
- Stir in salsa, cilantro, chilies, onion, garlic, cayenne and black pepper; mix well.
- Serve with tortilla chips and vegetable sticks.
