School's out for summer but you don't want your kids diets to be a bummer. However, with everyone on the go all the time, it can be hard to really sit down and think about what you're feeding your children.
That's why nutritionist Deborah Enos is here with some very healthy and equally yummy snack ideas for the kiddies this summer.
These are the tips you'll need:
Mason jar Apples: Grab a clean Mason jar; add 1-2 tablespoons of nut butter to the bottom. Slice an apple, sprinkle the apple with cinnamon and push the slices into the peanut butter. Add the lid and put in fridge.
Trail mix in a coffee filter: Coffee filters are a terrific (and CHEAP) way to portion out snacks and it does double duty as a plate & a placemat. I keep a shot glass in the trail mix bag (perfect ounce/serving size) pour it into a coffee filter and store in a container in the fridge. Easy to take outside or even in the car.
Muffin snacks: using a muffin tin, I add in healthy snacks in appropriate serving sizes. I will show nuts, dried fruit, cherries, popcorn, cheese, hardboiled egg hummus and carrot sticks.
KIND Bar: I love this bar. KIND Nuts & Spices is a new line of delicious whole nut and spice bars that are naturally low in sugar, high in fiber and a good source of protein.
Each bar has 5g of sugar or less (and nothing artificial – no sugar alcohols or artificial sweeteners) and between 5-7g of protein and fiber. My favorite is the Sea Salt & Dark Chocolate. While it tastes a bit like a nutty candy bar, this is a snack I can feel good about my kids eating.
Summer Veggie Pasta Salad:
1 cup tortellini pasta
1 cup cheese mini ravioli pasta
1 cup chopped fresh broccoli
½ cup chopped fresh red or orange bell peppers
1 large carrot, chopped
½ cup halved grape tomatoes
1 cup cubed mozzarella cheese
Cook pasta according to pasta directions. Strain pasta and toss 1 tablespoon olive oil. Let pasta cool to room temperature.
In a large salad bowl add cooked pasta mixture, broccoli, bell peppers, carrot, grape tomatoes and mozzarella cheese. Add dressing, toss to coat.
