Roasted Organic Chicken

This simple recipe makes the most of organic chicken's awesome flavor and it tastes all the better knowing the chickens were only given organic feed, and no antibiotics.

1 whole organic chicken (about 3½ pounds)
1 tablespoon extra-virgin olive oil
1 tablespoon dried mixed herbs such as thyme, rosemary and oregano
½ teaspoon coarse sea salt
¼ teaspoon freshly ground black pepper
1 onion, quartered (optional)

Preheat oven to 425°F. Remove inside packet of innards from chicken, if included, and discard or reserve for another use. Pat chicken dry. Rub with olive oil and sprinkle with herbs, salt and pepper on all sides and inside. Place on a roasting rack in a roasting pan, breast side up. For added flavor, place onion quarters inside the cavity. Tie legs together with kitchen twine to help the chicken keep its shape and cook more evenly. Roast 25 to 30 minutes. Remove from oven and baste with juices in the pan. Return to oven, reduce oven temperature to 375°F and roast another 30 to 40 minutes, basting once or twice, until juices run clear when a knife is pierced into thigh or meat thermometer reaches 165°F. Cover and let rest 5 minutes before carving.

Quick Chicken Tostadas

Assemble these tostadas for a crunchy, savory and amazingly fast dinner.

8 tostadas shells, no oil added
1 cup refried beans
12 ounces shredded roasted chicken meat
1 ripe avocado, peeled, pitted and sliced into wedges
1 cup grated pepper jack cheese
1 cup thinly sliced romaine lettuce
1 cup chunky salsa or diced tomatoes

Preheat oven to 350°F. Arrange tostadas on a baking sheet in a single layer and bake until hot, 3 minutes. Meanwhile, heat beans and chicken separately in small pots on the stove until hot throughout.

Spread tostadas with beans, then top with avocado slices, chicken, cheese, lettuce and salsa and serve immediately.
