This delicious Thai Cantaloupe salad is a perfect dish for a lazy afternoon.
Ingredients:
Salad:
1 Dulcinea Tuscan-Style Cantaloupe, peeled, seeded and cut into 1 inch cubes
1 cup English cucumbers, thinly sliced
cup red onion, thinly julienne sliced
cup fresh mint leaves, coarsely chopped
cup Thai basil leaves, coarsely chopped
cup cilantro leaves, coarsely chopped
cup green onion, minced
2 tablespoons fresh ginger root, minced
2 tablespoons fresh lime zest
Vinaigrette Ingredients:
2 fresh limes, juiced
1 tablespoon Sriracha hot sauce
1 teaspoon fish sauce
1 teaspoon honey
1 tablespoon lemongrass, minced
Garnish:
cup toasted peanuts, coarsely chopped
Lemongrass spears
Lime wedges
Directions:
1. In large bowl, toss all salad ingredients.
2. Mix together all vinaigrette ingredients in separate bowl.
3. Drizzle vinaigrette over salad, garnish and serve.
