Mexican Lasagna
Ingredients
1 tsp olive oil
1 1/2 lbs ground turkey
1 bunch green onions, chopped
1 package taco seasoning mix, 1.25 oz
2 cups water
1 can (14.5 oz.) diced tomatoes, undrained
1 can (4 oz.) diced green chiles, undrained
1 container (15 oz.) ricotta cheese
2 eggs
9 Mission Soft Taco Size Flour Tortillas
1 container (8 oz.) sour cream
1/4 cup fresh salsa
Juice of one lime
1 cup mozzarella cheese
Directions
Preheat oven to 400 degrees F. Heat olive oil in a pan. Cook turkey over medium high heat until evenly brown. Stir in green onions, taco seasoning mix, water, diced tomatoes with juice, and green chiles with juice. Reduce heat and simmer.
In a medium bowl, mix together ricotta and eggs. Place 3 tortillas in the bottom of a 9x13 inch pan. Spread 1/4 of the ricotta mixture on tortillas. Spoon 1/4 of the meat mixture over the cheese. Repeat layers. Top with mozzarella cheese.
Bake in preheated oven for 20 minutes, or until sauce is bubbly. In a small bowl, mix together sour cream, lime juice, and salsa. Serve in a bowl on the side.
