Few of us get enough fruits and vegetables in our diet. One way to boost consumption is by combining them in a single dish.  Jean Enersen shows how to supercharge a spinach salad.

This spinach salad combines a number of super foods: spinach, asparagus, avocado and "Thin Crisp" crackers, which is loaded with fiber, on the side.

Mix a standard oil and vinegar for a dressing. You can substitute the vinegar with lemon juice or any other citrus you have on hand, such as orange. Mix the citrus juice/vinegar with oil, mustard seeds, salt and pepper and drizzle the dressing over the salad.
