Healthy Dish: Sautéed Shrimp and Pesto with Zucchini 'Noodles'

Zucchini is always plentiful and finding new ways to enjoy this delicious gourd is a job done well by Kirsten Helle of She transforms this nutritious squash into creative pasta like noodles with pesto and shrimp for an inventive Healthy Dish.

Sautéed Shrimp and Pesto with Zucchini 'Noodles'

This is a meal that comes together in 5-10 minutes and is so simple anyone can make it! Instead of serving over pasta, serve on top of these gorgeous and nutritious zucchini noodles for a big boost of healthy vegetables - something everyone should get more of - you won't even miss the pasta!

Serves 4-6

2 tsp healthy oil/fat of your choice
1 lb cleaned and shelled wild shrimp
2-3 cloves garlic, minced
1 pinch Kosher/sea salt
Fresh ground black pepper
1 cup pesto (homemade or high-quality fresh store-bought)
2 Tb hot water
4 medium/large zucchini
Fresh Parmesan, optional

Make the zucchini "noodles" by either cutting the zucchini into thin julienne strips with a mandolin, knife, or simply using a vegetable peeler to make long, thin noodles. Place the "noodles" in a colander over a bowl and pour boiling water over the zucchini. Cover with a lid or foil and let it steam while you cook the shrimp.

Heat a large skillet over medium-high heat, when hot add oil, swirl to coat. Add the shrimp, garlic, salt and pepper. Sauté, stirring often, until the shrimp start to turn pink on the outside and curl slightly. Stir in the pesto and water. Simmer until the shrimp are cooked all the way through. By now your zucchini is perfectly steamed (you want it al dente, just like pasta). Place the zucchini in the sauce and toss gently to coat. Serve the shrimp over a bed of the zucchini noodles, spooning any additional sauce over the top. Grate a bit of fresh Parmesan cheese over the top if you wish. Enjoy!
