Super foods. We've heard the term before, but how do you make them into something that's tasty? Jean Enersen cooks up what she calls her "Monster Soup” that has a mystery ingredient will keep your family guessing.
Jean Enersen’s Monster Soup
Celery (including the tops)
Chicken (cooked, fresh or canned)
Chicken Broth (low sodium)
You decide how much of each vegetable to use. Mix and experiment with your favorites.
Chop up your vegetables in bite sized pieces then sauté the chopped onions in a little bit of olive oil until they're soft and just starting to brown. Add chicken stock to a soup pot on high heat and bring to a boil then add all the chopped vegetables and onion to the pot. Lower the heat to a simmer and cook until the vegetables are soft (about 15 minutes). Add your cooked chicken and a little bit more chicken stock to even out the consistency, stir and re-heat.
Then to spice up the flavor add a little bit of prepared salsa to give it a special flair. Also try the super food spice Turmeric as a finishing touch.
