HEALTHY DISH: Kale Salad with Pine Nuts

Chef Audrey Spence from the downtown restaurant Serious Pie restaurant shows how easy it is to make a healthy and delicious kale salad.

Ingredients

Lacinado Kale separated from the stem, washed and torn for salad
Calabria Chili diced, seeds removed
Garlic Infused Extra Virgin Olive Oil
Fresh Squeezed Lemon Juice
Salt / Pepper to taste Fresh
Grated Parmesan Cheese
Toasted Pine Nuts

Directions

Toss the salad well and test for flavor then add whatever ingredients are needed to balance the flavor.

Refrigerate for 30 to 60 minutes to develop the flavor and allow the lemon juice to tenderize the greens.

Finish with more Parmesan Cheese on top and a sprinkle of Pine Nuts for crunch.
