How would you like a breakfast or lunch that’s super easy to make, you and the kids can do it together, it’s loaded with vitamins, and it tastes really good. KING 5’s Jean Enersen shows how to make her Green Monster Smoothie.
Green Monster Smoothie
4 large fresh leaves of Kale or equivalent of Spinach
¼ cup of fresh Mint or Basil
½ cup fresh or frozen Pineapple (using a frozen fruit or ice will make the smoothie colder)
½ cup fresh or frozen Strawberries
½ cup Kiwi or Blueberries
1 container (12 oz) Coconut Water
Start by taking the stems out of the Kale and tear the leaves into smaller pieces and drop into the blender. Add the Mint or Basil and 1/3 of the Coconut Water and blend well to get the greens all chopped up. You may need to use a wood spoon or spatula to push the greens into the liquid helping them mix between blending cycles.
Next add your favorite fruit and try experimenting to find tasty combinations. Add enough Coconut Water with the fruit to make a smooth mixture. If you like your smoothie cold try adding ice or frozen fruit.
Blend everything together well, and a nutritious and delicious Green Monster Smoothie is ready to serve.
