We all know that breakfast is an essential part of starting your day off right. But, when you’re moving quickly and trying to get out of the house, cooking is the last thing you want to do. As a result, many just grab a piece of fruit or an energy bar. However, on mornings when you can spare an extra 20 minutes, we’ve got a great recipe for hearty oatmeal.
Oatmeal warms you up, fills you up and keeps you energized all day long. This is just what you need for those dreary, rain-soaked fall days.
APRICOT HONEY OATMEAL
(Makes six servings)
- 3-1/2 cups water
- 1 tablespoon brown sugar, packed
- 1/2 cup dried apricots, chopped
- 1/2 cup honey
- 1-1/2 teaspoon cinnamon, ground
- 1/4 teaspoon kosher salt
- 1-2/3 cup steel cut oats
- 3 cups soy milk, unsweetened
- Bring water to a boil
- Add brown sugar, apricots, honey, cinnamon and salt
- Stir in the oats then reduce heat to a simmer
- Cook the oats, stirring often for about 15 minutes (or until oats are soft and water is absorbed)
- Add desired amount of soy milk
Note: For creamier oatmeal, substitute some of the water with warm soy milk.
