This time of year, you're not going to be able to get much vitamin D from the sun. Supplements work, but did you know that mushrooms are the only plant based source of vitamin D? KING 5's Jean Enersen shares a tasty way to serve them.
Mushroom and Spinach Salad
2 cups of diced mushrooms (Crimini or use your favorite)
4 cups of Spinach
Salt & Pepper to season
Grated Parmesan Cheese
Diced Hard Boiled Egg
Balsamic Vinegar and Olive Oil to taste
Heat a small amount of oive oil in a pan and add the diced mushrooms. Saute for 5 minutes turning once. Turn off the heat to the pan and add the spinach. Toss the spinach and mushrooms like a salad until the spinach begins to wilt and then plate and top with your favorite condiments.
