Thyme for Turkey Meatloaf Muffins

Fresh thyme is an herb that has both antiviral and antibacterial properties making it the perfect addition to your culinary medicine cabinet. When paired with turkey and some other warming spices in a convenient muffin-sized portion, just 3 teaspoons of thyme puts the finishing touch on a very quick and easy entrée!
        
Preparation Time: 1 hr
Yield: 12 meatloaf muffins

Ingredients:
1 tablespoon olive oil
1 cup white mushrooms, finely chopped;
1 ½ teaspoons sea salt
1 medium onion, finely chopped
1/4 teaspoon cayenne pepper
1 teaspoon chili pepper flakes
3 teaspoons fresh thyme leaves
1 teaspoon oregano, dried
3 cloves garlic, minced
2 tablespoons tomato paste
2 eggs
2 lb ground turkey

Sauce ingredients:
½ cup tomato sauce
1 teaspoon balsamic vinegar
1 tablespoon honey (optional)    

Instructions:
Preheat your oven to 350º. Line muffin tins with parchment paper cups.
In a medium sized skillet warm oil over a medium heat and sauté mushrooms. Once mushrooms are soft, combine them with rest of the  meatloaf ingredients.
Bake for 45-50 minutes or until cooked through. (Internal temperature of 165°)
Meanwhile combine the ingredients for the sauce.
Serve turkey meatloaf muffins with sauce.
