The juicing movement has long been popular in the health community, but now it’s gaining momentum with the mainstream population. That’s no surprise given the healing benefits of juice and the fact that you can get a week’s worth of veggies, minerals and nutrients in a single glass.

The juicing movement has long been popular in the health community, but now it’s gaining momentum with the mainstream population. And that’s no surprise given the healing benefits of juice and the fact that you can get a week’s worth of veggies, minerals and nutrients in a single glass.

Two Seattle juice cafés are leading the way with cold pressed, health-boosting juices.

Abigail Stansfield owns the Juicy Café, which has been a healthy fixture in downtown Seattle for over 20 years. Stansfield said she believes in "a well-balanced, tasty and healthy lifestyle."

"The Juicy Café’s approach to achieving that is about listening to what your body wants, having fun with it and not depriving yourself," Stansfield said.

Stansfield doesn’t believe in crash-dieting or fads, and her café is filled with fresh fruits, veggies and all-natural healthy snacks. She creates concoctions that do everything from taming your tummy to adding radiance to your skin. 

On a corner, atop Seattle’s Capitol Hill, you’ll find Justin Brotman’s health food haven, Healeo.

"The health philosophy at Healeo is pretty simple -- food is medicine," Brotman said. "Drinking juice and eating whole foods can prevent so many common health problems and, more importantly, make you a happier person. We like to show that juicing and healthy habits are part of a lifestyle and are not a chore."

Like Stansfield, Brotman also doesn’t ascribe to quick-fix diet programs. He advocates "creating a lifestyle where juice, healthy foods and exercise become something you look forward to and crave."

"I believe if you create a lifestyle around healthy living, you should and will want to juice every single day. It really doesn't take long after changing your diet to start feeling and seeing a difference," he said.

Below you’ll find ingredients and a host of health benefits for juices from both the Juicy Café and Healeo. And if you’re a little apprehensive about drinking a salad, never fear. Each of these juices is specifically designed to taste great.

Juicy Café's Abigail's Green Religion

  • Ingredients: Kale, spinach, celery, parsley, cucumber, romaine, lemon, ginger
  • Health benefits: Reverses the signs of aging, aids weight loss, helps you to become more "regular," gives you vibrant and glowing skin. Fresh green juice can be beneficial to those with diabetes and can be a daily way to detox the body and reduce inflammation.

Curious as to why this juice is called Abigail’s Green Religion? Well, several years ago, Stansfield suffered a massive head trauma, and she credits green juice with aiding her recovery. 

"Drinking a green juice per day really relieved some of the pressure and inflammation that my body was experiencing," she said. "I truly believe it helped me recover rapidly.  Now drinking a green juice a day is just part of my plan. That is why I call it Abigail's Green Religion."

Research shows that ginger is filled with anti-inflammatory properties, and Stansfield said the green ingredients like kale, spinach, romaine and parsley are filled with "essential vitamins and nutrients that our bodies need to function and heal."

"The amount of minerals, vitamins and enzymes that are in one glass are astounding," she said.

Since Stansfield believes in drinking green daily, she has a suggestion to get the most from this super juice. She said "it is best to drink your green juice one hour before your morning coffee as the acidity of the coffee will negate the juice’s alkalizing effects."

The sweet and tangy lemon and zesty ginger in the juice balances out the earthy flavor of the green veggies. The cucumber adds a cool, refreshing taste and the blast of nutrients makes this juice a bit of an energy boost.

Juicy Café’s Tummy Tamer

  • Ingredients: Ginger, apple cider vinegar, banana, rice milk
  • Health benefits: Helps tame a tummy ache, soothes motion sickness, detoxifies, increases circulation and reduces diarrhea, gastrointestinal discomfort and indigestion.

If you have a weak stomach or digestive issues, then Juicy Café’s "Tummy Tamer" just might be the drink for you. According to Stansfield, the key ingredients to this elixir are the ginger and the apple cider vinegar.

"Ginger reduces inflammation in a similar way that both aspirin and ibuprofen do, and it helps to naturally prevent motion sickness, relieve nausea, vomiting, cramps, diarrhea and stomach flu,” she said.

Apple cider vinegar is something you probably already have in your kitchen cabinet, but did you know it's filled with healing properties? A little goes a long way, so Stansfield adds a splash of the detoxifying ingredient to "reduce common indigestion and gastrointestinal discomfort."

The rice milk and banana provide a nonacidic base, making the juice easy on the stomach and giving it a rich, almost tropical, taste.

Juicy Café's Skin B Beautiful

  • Ingredients: Beet, parsley, cucumber, lemon, apple, carrot
  • Health benefits: High in antioxidants, increases vibrancy and elasticity of skin, improves hydration, packed with vitamins (A, B, C, plus iron, magnesium, potassium, silica), energizes, reduces inflammation, lowers cholesterol, lowers blood pressure, helps fight cancer.

After spending money on fancy creams and moisturizers, who would have thought you could drink your way to more beautiful skin?  The standout ingredients in this juice include parsley and beets. Parsley (Standsfield’s superveggie) is "great for slowing down the aging process," she said. "It’s high in iron, very high in antioxidants and great for flushing out unwanted fluids from the body which reduces under eye puffiness." Beets are actually one of Stansfield’s favorite vegetables to add to juices. She said the vegetable "can lower blood pressure and cholesterol and help your body respond better to exercise through increasing oxygen and blood flow."

The other Skin B Beautiful ingredients include cucumber to improve skin’s hydration, plus the veggie’s magnesium, potassium and silica helps the skin become more radiant. Carrots are filled with beta-carotene, which acts like a natural sunscreen to protect skin from sun rays, free radicals and toxins. The vitamin-C-filled lemons increase collagen, said Stansfield.

Healeo’s The Green Drink

Brotman stressed the health benefits of chlorophyll found in The Green Drink’s spinach, kale, parsley and celery.

Your hemoglobin (that has a similar molecular structure as your red blood cells) will get elevated, improving the blood circulation and giving your body a boost of energy," he said, adding that this improved circulation cleanses the digestive system, lungs, liver and uterus. 

You may be surprised to find out that, according to Brotman, green juice can help your body better absorb calcium.

"Magnesium is essential for efficient calcium utilization. The chlorophyll molecule has magnesium at its center, and when you include green juices in your daily diet, it helps you absorb calcium better," he said.

Plus, chlorophyll foods also act as a form of "stored sunshine" which can help regulate calcium and vitamin D deficiency, something Northwest residents would like during the rainy fall and winter months.

He squeezes lemon in the juices because "lemons contain substances like citric acid, calcium, magnesium, vitamin C, bioflavonoids, pectin and limonene that promote immunity and fight infection."

You’ll find the juice bright and a bit tangy, with a burst of ginger flavor.
