If you've suddenly decided you're in the mood to throw together a last-minute Independence Day celebration, it's really not too late. Entertaining expert Heather Christo shares some ideas for a spur-of-the-moment Fourth of July get-together.

Blue Cheese Stuffed Turkey Burgers

2 pounds ground turkey
¼ cup parsley
½ onion, finely diced
2 eggs
6 dashes worchestershire
Salt and pepper
8 ounces Blue Cheese
 
6 hamburger buns
Cheddar cheese
Ketchup
Mustard
Avocado
Red Onion
Lettuce
 
 
1. In a large bowl, combine the turkey, parsley, onion, eggs and worchestershire sauce with clean hands.
 
2. Form 6 burgers with the meat mixture.

 
3. Divide the cheese between the burgers.

 
4. Push the cheese into the center of the patty and then fold the meat back over the cheese. Refrigerate for at least an hour.

 
5. Preheat the BBQ to medium heat.

 
6. Grill the Burgers until cooked through, about 6 minutes on each side.

 
7. Place the burgers on the buns, and pile on the cheddar, avocado, onion and lettuce.

 
8. Serve hot!
 
 
Chocolate Graham Crackers

2 cups AP flour
½ cup cocoa powder
1 cup brown sugar, packed
1 tsp baking soda
½ tsp salt
10 Tbs butter, cold
¼ cup honey
2Tbs vanilla paste (or extract)
¼ cup milk, room temperature
 
1. Preheat oven to 325 degrees.

 
2. In a small bowl, combine the milk, honey and vanilla (extract or paste.)
 
3. In the bowl of a food processor, combine all of the dry ingredients, (Flour, cocoa, sugar, baking soda and salt.) Pulse to combine them. Add the cold butter to the dry ingredients, pulsing to create a coarse crumb.
 
4. While the food processor is running, slowly pour the wet ingredients into the dough. Process until the dough is just past the crumbly pie crust stage, and has come together into a uniform dough.
 
5. Turn the dough out onto a sheet of parchment. With a little flour and the sides of the parchment paper, get the dough into a disc, and chill for about 15 minutes.
 
6. When the dough is chilled, turn the dough out onto a lightly floured surface. Shape and roll out the dough into a large rectangle that is about 1/8” thick. Cut the crackers into whatever size squares or rectangles that you desire. Gently move the dough to a silpat or parchment lined sheet pan. Poke holes in the cracker to prevent them from puffing up. Sprinkle them with sugar.

7. Bake at 325 for 15 minutes. Let them cool, (they will crisp up more as they cool). They can be stored up to a week in an airtight container.
