Healthy kale chips, 'super hero salad' and ranch dressing

KALE CHIPS
1 bunch Dinosaur Kale
High temperature cooking oil 9like sunflower oil)
Salt & pepper to taste
Cut kale into bite size pieces. Place oil and salt and pepper into a large bowl and mix. Place kale into bowl with oil and toss to coat. Place kale onto a baking sheet and bake at 375 for approximately 7 minutes (check on them often to make sure they do not burn)

SUPER HERO SALAD
The idea is to incorporate all of the colors in this salad - make it FUN! Try different ingredients for each color and see what the kids like most! Allow the kids to participate as much as possible!

Ingredients

1 to 2 tablespoons Ranch Dressing or other dressing of choice
Any combination of ingredients from the following suggestions:

RED
•    Cherry tomatoes or sliced tomatoes
•    Sliced red bell peppers
•    Sliced apples
•    Dried cranberries
•    Raspberries, fresh or frozen
ORANGE
•    Shredded carrots
•    Orange wedges
•    Sliced orange bell peppers
GREEN
•    Green leafy lettuce
•    Romaine lettuce
•    Chard, spinach, kale, or a mix of these
•    Mixed baby greens
•    Broccoli, steamed or raw
•    Sliced Granny Smith apple
BROWN
•    Sliced crimini or button mushrooms
YELLOW
•    Sliced yellow bell peppers
•    Sliced yellow carrots
•    Pineapple chunks
BLUE
•    Blueberries, fresh or frozen
Preparation
Choose 1 ingredient from each color and mix together in a bowl. Drizzle 1 to 2 tablespoons of Ranch Dressing or other dressing of choice over the salad right before serving. Enjoy!

RANCH DRESSING
Ingredients
•    1/2 cup mayonnaise
•    1/2 cup plain yogurt
•    1 teaspoon garlic powder
•    1 teaspoon onion powder
•    1 teaspoon dried dill
•    1/2 teaspoon black pepper
•    1 tablespoon fresh parsley (optional)
•    1 to 2 tablespoons milk (to make thinner if desired)
Preparation
Add all ingredients to a bowl and stir together with a whisk until the herbs and spices are mixed evenly. For a thinner dressing add milk, 1 tablespoon at a time, until desired consistency is reached.


MASHED PARSNIPS

Handful baby red potatoes
1 large parsnip
Butter
Salt and pepper
Slice potatoes and parsnip and boil. Once boiled add 1 tablespoon of butter and salt and pepper to taste. Mash together. Serve.
