Fast food and TV dinners are often two of the main staples when it comes to a college student’s diet, but those don’t have to be the only options. Kitchenablility 101 is a new book from chef Lisa Burns, and though it’s a college student’s guide to making easy, healthy and tasty dishes, the recipes can be made by anyone anywhere. Nisa shows how to make three delicious dishes using one rotisserie chicken.

Chicken Soup for the Tummy
Makes four servings

What You Need
1 cup spinach
2 stalks celery
1 small onion
1 carrot
1 tbsp butter or cooking oil spray
1 lb uncooked noodles of your choice, egg noodles preferred
2 cups cooked chicken
8 cups chicken stock
Salt and pepper to taste
2 sprigs fresh parsley, chopped, or 2 tsp dried, for garnish

What You Do
1. Chop the spinach into bite-sized pieces. Cut the celery and onion into ¼-inch dices. Cut the carrot into ½-inch-thick rounds. Chop the fresh
parsley.
2. Melt the butter in a soup pot over medium heat, or use cooking oil spray. Add the onions and celery, cooking until the onions start to brown. Stir often so heat can circulate.
3. Add the spinach to the pot. Cook until it’s fully wilted and mixed with the other vegetables.
4. Put the vegetables, noodles, cooked chicken, and chicken stock into pot. Cook over medium to high heat until the stock boils, then turn heat to low.
5. Let simmer for 15 to 20 minutes, until the noodles and carrots are soft. Use a fork to check if they are done.
6. Add salt and pepper to taste.
7. Sprinkle with the chopped parsley and serve hot.


Mango Lime Salsa
Makes about two cups

What You Need
1 ripe mango, peeled, pitted, and small diced (about 1½ cups)
½ medium red onion, finely chopped
1 jalapeño, finely chopped (include ribs and seeds for a hotter taste)
3 tbsp fresh cilantro, chopped
3 tbsp fresh lime juice
½ avocado, peeled, cored, and small diced
½ tsp salt
½ tsp pepper

What You Do
1. Combine all of the ingredients except the salt and pepper in a bowl.
2. Season with salt and pepper.
3. Serve with tortilla chips or on tacos.
