This dish uses an ingredient few people can pronounce: quinoa (like "keen-wah"). It's the best source of plant protein and has lots of fiber. Try this easy recipe:
1 cup Quinoa
2 -3 Green Onions (Scallions)
½ cup Golden Raisins
Follow the directions on the package for cooking Quinoa, but basically 1 ½ cups water to a cup of Quinoa bring to a boil and then turn down the heat to a low simmer and keep your pan covered for 15 minutes. Take the pan off the heat, keep covered and after five minutes fluff the Quinoa with a fork.
You’re ready to add the scallions which should be cut into bite size pieces.
Add the raisins next and mix together then you’re ready to serve.
You can add your favorite healthy dressing or some lemon juice, but you will probably enjoy the delicious, earthy flavor of this healthy salad all by itself.
