Canlis Chef Jason Franey makes delicious Lobster Beurre Monte

It's hard to believe, but Valentine's Day is only a couple of weeks away. For more than 60 years, Canlis has been a special occasion destination and recently ranked onto a list of the top 100 Most Romantic Restaurants in the country, according to Open Table Reviews. Canlis Executive Chef, Jason Franey, shows us how to make the very romantic lobster dish, Lobster Beurre Monte.

Roasted Australian Lobster Tails

YIELD: serves two


2 lb Australian lobster tail
4 oz Butter
4 oz white vermouth
4 sprigs Tarragon

Preheat an oven to 450 F. Split lobster tail in half and season with salt. Place lobster tail in hot sauté pan and deglaze with vermouth. Add tarragon and cook for 20 minutes, basting as you cook .
