Apple salad with chives and blue cheese

What's not to like about apples? They're available all year round, they're versatile and they're good for you. Chef Audrey Spence with Serious Pie restaurant shows how to make apples the foundation of a really great salad.

The salad contains the following key ingredients:

Apples - very low in saturated fat, cholesterol and sodium. It is also a good source of dietary fiber and Vitamin C.
Chives - a good source of thiamin, niacin, pantothenic acid, phosphorus and zinc, and a very good source of dietary fiber, vitamin A, vitamin C, vitamin K, riboflavin, vitamin B6, folate, calcium, iron, magnesium, potassium, copper and manganese.
Olive Oil - low in cholesterol and sodium
Blue Cheese - lots of protein, calcium and phospherous
White Balsamic Vinegar
 
APPLE SALAD

Ingredients
Lady Alice Apples or your personal favorite
Chives
Hazelnuts
Blue Cheese
White Balsamic Vinegar
Olive Oil
Salt Pepper

Directions
Cut the apple into big match stick pieces. Dice the chives and add to the sliced apples with a mild salt like Murray River salt, also season with some cracked pepper. Then drizzle with mild sweet white balsamic vinegar and extra virgin olive oil. Now toss the ingredients together to mix well. You can plate the salad and crumble on some blue cheese. Rough cut the toasted hazelnuts and sprinkle on top to finish.
